I've never made fish jerky nor have I tried it. Yet. I will make some as soon as I go fishing. Gonna try some bream and sac-a-lait (crappie). Has anyone done this? Got any good recipes?

Never have tried it either. Not sure on my maiden voyage if I'd waste a bunch of good fish fillets though. LOL

Let us know how it works out.

Tried it once.
On long, cold nights, if I close my eyes really tight, I can still taste it. It's one of the foulest things I've ever put in my mouth. No idea what kind of fish it was made from, but I'm pretty sure it was living near a sewage outflow.

Rob,
Thanks for the warning, Rob.  I naively thought maybe this was a local term for smoked salmon, trout, etc., which I dearly love.  Believe I'll have to pass on anything that tastes like dehydrated sewage.

I've made some from a couple bass, thought it tasted alright, but I don't mind a fishy taste. I just used a cabela's premixed bag for this stuff. Can't hurt to try it out and see if it works for ya. Although I would keep it in the fridge and eat it fairly fast... wouldn't want that stuff to go bad!

I made some carp fillets that I soaked over night in salt water then smoked. Turned out really good and the small feather bones seemed to disappear.

Up here it is a staple and unbelievably delicious.  Not politically correct, but it is called squaw candy.  It is strips of usually sockeye salmon that has been brined and then cold smoked with alder or cottonwood.

Looks good. Ive eaten smoked herring a million times that my Gram used to give me and it was delicious. Might be smoking only does well on oily fish.
