I'm amazed at how many folks say they love smoked salmon and it's never crossed their mind to smoke trout.  Aren't they first cousins of the fish world or something? Anyway, one of my faves.  I can get trout cheap(if you don't count the cost of the license, gas...never mind)!
Can't remember if I used applewood or mesquite with mine.  You can experiment and marinade the fillets in a flavored brine also if you choose.
