OK, we all love to bow fish them and they have tons of meat on them. So far i've just used them for cut bait when i go catfishin. I've ate them once but they were prepared by a mexican feller i worked with in the form of fish tacos and MAN they were good! i'm too scared to cook them myself but would really love to sometime. Also i've heard they're hard to clean, so I need advice/instructions/recipes from the pros if any of you out there eat them? Thanks a bunch guys
Now then, get your weapons, your quiver and your bow and go out into the open country to hunt some wild game for me.- Genesis 27:3

i persoannly love to smoke em.  I smoked almost 45 pounds of them back in july.

Just gut em, de head them, and smoke for 12 hrs.  pull off the meat and enjoy.

also, once you fliet a few you will get the hang of how to get the meat and leave MOST of the bones.   Also cross cut them to break up the little bones before deep frying.
