INFO: Trad Archery for Bowhunters



Italian Bear (or Italian whatever)

Italian Bear

3-4 lb  chunked bear meat or roast

1 tsp garlic powder
1 tsp crushed red pepper flakes
1 tsp salt
1 tsp dried basil
1 tsp dried oregano
1 tsp ground black pepper

24 oz water (or beer)
1-2 bay leaves
1 16oz jar pepperoncini or 16 oz jar giardiniera ( I prefer pepperoncini)

Rub meat with dry seasoning and roast oven for 30 minutes until browned.  Add browned meat and liquid, bay leave(s), pepperoncini to crock pot and cook on low 8-10 hours until meat falls apart and is fork tender.

Serve on Italian rolls with provolone cheese.

or use Louie's Italian beef seasoning   http://www.louieseasoning.com/  (again, I use beer instead of water)

Folks, I make this using venison, bear, goose, duck, pork, wild boar... you name it.  Good eat'n.

I just put some of this in the crock pot this morning, using venison from last year.  I sampled the meat out of the oven and it already tasted great!!  I'll be dreaming of this all day     :bigsmyl:
