refreeze meat

I have some frozen venison that I want to make into sausage. It is already frozen because of transport. Can i thaw it, grind it and re-freeze once? Thanks

Never tried to re-freeze any meat. I have been told not too but if you are going to make sausage why not air dry or smoke it? You want have to worry about it keeping.

Matt, I'm trying to make ground sausage. Mix it with pork butt and seasoning.

I've done it many many times without a problem. If you refreeze many times it will be a problem since you lose moisture everytime you freeze then thaw.
