This isn't my recipe but man are they good.

Cut venison into strips 2" wide and about 1/4" thick.
Any cut will do but the backstraps are best.

Marinate in your favorite stuff. I soak mine in Italian dressing and right before I use them I sprinkle a little Worchester on them.

Cut up some Red & Yellow Bell Pepper,Red oinion and some Jalpeno(sp?) into thin strips.

Now take the venison strips and place your veggies in them and roll them up along with a little cheese.

Season them with what ever. I use Lawry's Season salt.

Now wrap the whole thing in Peppered Bacon and hold together with tooth picks and place them on the grill. Do not over cook them!

Everyone I've made these for has raved about them.
They go quick. Enjoy.

Mike , you sure you aint from South La. that sound like sometin a cajun would eat...mark let me know if you want to shoot one of the lighting longbows I have if you get down this way..Mark chambers

Hey, I'm stupid....what kind of cheese are you talking about here...a little cheddar off a block- then stick the veggie pieces and cheese together, roll them up in the venison strip?

I just use that shredded mixed cheese. American & Colby. (Yellow/White)

You just lay the meat out and place the veegies on it and start rolling it up. Place a couple pieces of this or that roll a little bit put some more in,roll some more adding cheese as you go.....ect..
