Big Rat....

Made about a quarter mile stalk around at this guy , it and a few others were on the bank eating the green grass. Always heard Nutria was good eating so I needed to find out and I heard right. The meat was very good and I'm having the hide tanned....

Not at all like beaver. They have a very light meat more like rabbit. They make a wonderful stir fry. Very mild flavor on the meat and take well to your favorite seasoning.
