I am determined to make or buy a smoker- I have room for it; and just can't make up my mind.
I sure wood  :)  like to see your smokers!

Do You have any BBQ competitions around You? Looking for something big enough to do whole animals or something for just weekend cooking?

We are lucky around here to have BBQ cook-offs almost every weekend somewhere. You can go and talk to people and get all the pros and cons before You dive in to a big project.

I've got less than a hundred bucks in this thing including buying the barrel, All stainless hardware and new grate. They can be put together lots cheaper if you like to scrounge...

I can't say enough good things aboout it either! Holds temps rock solid for hours at a time and uses barely any charcoal.

This weekend I've smoked a chuck roast, a pork shoulder and right now have 5 pounds of chicken on it and I have used one 14 pound bag of charcoal all weekend.

Just google ugly drum smoker and you will get enough hits to keep you reading for days

I am looking for a permanent smoker I can build on my property that would be big enough for everything short of a mastadon. I like summer sausage - and have the know how on how to make it. But - I don't have a smoker. I do have room - a side of a hill to dig into - and cement and rocks to work with.

Brian, log onto  www.barbecuenews.com  .  You will get all the info there that you will need.  The folks there are dedicated, knowledgable, and sharing.  I am not familiar with building a smoker into the ground or the side of a hill.  Excellent insulator, and it has been done.  Good luck with it.
