bear meat?

Anyone on here have black bear? I tried some today from my dads bear last year and it was terrible, had a strange taste

Never had bad bear meat or meat that tasted funny.  I do know folks that have killed a "dump" bear, meaning one that has fed strictly from a town garbage dump.  That bear stinks all around, and the meat was awful, inedible I was told.
As long as the bear ate from the forest and was field dressed, skinned, cooled, and processed quickly, the meat should've had no time to spoil.

I find bear meat to be very good: I have had it quite a few different ways over the past 30 years and all were good.In Chili,Stoganoff,Stew,Roast,Sausage and just ground up on its own (plain) and make burgers on the grill on thin rolls or english muffins and MY Wife likes it too !! It gets a bad rap and I believe alot of folks guides included shun it for some reason or another a biggy might be no where to cool it down and or plain can;t be bothered laziness in MHO.

An acorn eating fall black bear is the best meat Ive ever eaten. Ive killed many in canada and they were all delicious also.

had an opportunity some years ago to eat some bratwurst made of black bear and it was some the tastiest sausage I have ever eaten...

I think it is great eating! The only problem my wife has with it is it gives me terrible gas! I love a smoked bear roast. Best BBQ out there.
I would've taken better care of myself,if I'd known I was gonna live this long!

Love bear meat. I killed one this fall with my longbow and then a few hours later killed another with my dodge ram. Stews, roasts, steaks, loins and a bunch of sausage so far and its outstanding.

I've only had beat once and it was delicious. One of the best meats I've ever eaten. Also rendered the fat and. F.  d used that to make wild ramp and nettle bear fat pesto. It was amazing. And both were really good on pizza.

Like all wild game its all in how you process it.  You need to get the fat and silver skin off the meat.  I am very fond of bear meat.

One thing to remember, Bear have a thick hide. If the bear was not skinned right after the harvest that can spoil the meat fast, a lot of people make the mistake of taking the bear around and showing all the friend and family. Not saying that's what happened here just that that happens a lot.  Don't leave out the idea of pressure cooking. A bear I had one time was really tough. I used a pressure cooker and it was great.
