Anyone have a recipe for a good white chili?

I had some white chili at a soup supper a long time ago and it was delicious. I was hoping someone might have a good recipe for some.

I certainly do...  Be looking for a PM from me, I gotta go find it on my hard drive!  Excellent dish by the way!

BigRon -- What! You never had white chili??  Well it's pretty simple make your favorite chili recipe and add a cup of bleach -- works every time!  LOL  Truthfully, white chili is a Chicken broth based Chicken chili with white beans and, although it tastes like real chili, it is white!

I've been fixing this one for the last couple of years, really hits the spot.

MONAS' CHA CHA WHITE CHILI

1 tablespoon vegetable oil
1 onion chopped
3 cloves of garlic, crushed
1 (4 ounce) can diced jalapeno peppers
1 (4 ounce) can chopped green chile peppers
2 teaspoons ground cumin
1 teaspoon oregano
1 teaspoon ground cayenne peppers
2 (10.5 ounce) cans chicken broth
3 cups chopped cooked chicken breast
3 (15 ounce) cans white northern beans
1 cup shredded monterey jack cheese

DIRECTIONS:
1.) heat the oil in a large saucepan over medium low heat.
  Slowly cook and stir the onion until tender.  mix in the garlic,
  jalapeno, green chile peppers, cumin,oregano and cayenne.  
  Continue to cook and stir the mixture until tender, about 3-5
  minutes.  mix in the chicken broth, chicken and white beans.  
  Simmer about 15 minutes, stirring occasionally.

2.) Serve.  may add handful of monterey jack cheese on each bowl
   of soup when serving.

Not white chili but folks around here call them Juan's Famous Ranchero Beans  :p  

1 crock pot
3 cups rinsed pinto beans - depending on the size of your crock pot
1 large onion - cut in chuncks
2 large tomatoes - quartered
bunch of cilantro - to taste - chopped
3 cloves gralic whole - or to taste
3 fresh jalapeno peppers - whole or sliced
bacon to taste - optional
salt to taste
water to cover beans

Get-r-Done
Rinse crock pot
clean beans and rinse really well.
Add beans, garlic, bacon and salt to crock pot, cover with water, cook overnight.
In the morning add the rest of the stuff and cook 2 hours, enjoy.

Hi, Karen, here....... this is a Chicken Chili recipe that Doug likes and I got published in an upcoming cookbook.  Hope you will enjoy!!!

CHICKEN CHILI

serves: 4 - cup servings

1 1/2 - 2 lbs fajita chicken strips, cut into    bite size pieces
1 Tbsp. olive oil
1/4 cup chopped onion
1 can chicken broth
1 4 oz. can chopped green chiles
1 19 oz. can Cannellini beans, undrained
1 can Rotel diced tomatoes & green chiles
1 tsp. ground Cumin
1 tsp. Garlic powder
1/2 tsp. Cilantro leaves
1/2 tsp. Oregano leaves
1/8 tsp. Gr. Red Pepper

Serve with: sliced green onions, sour cream, salsa, grated Monterey Jack
or cheddar cheese and tortilla chips.

In a large sauce pan, saute onions in olive oil for a few minutes. Stir in chicken
broth, green chiles, Rotel tomatoes, chicken pieces, spices and simmer for about
15 minutes. Add beans and cook for about 10 minutes longer. Serve with
garnishes above. (I sometimes add some cheese to the chili as it cooks.
And I usually double the recipe.)
