back straps???

please someone fill Me in....... not sure what "basck straps" are

Never mind.

After double checking I seems what I always called the back strap is the tenderloin.

Ahh, the eternal confusion...if you call backstrap loin, then whaddya call the tender morsels on the inside of the rib cage, back at the waist?

I was taught to call the stuff along the spine on the outside of the ribs backstrap or ribeye (the part with the silverskin sinew on it), and the smaller morsels under the ribs tenderloin.

Upon further investigation, it seems to me that meat professionals consider only the muscle that lies along the top side of the spine between the long ribs and the hip to be the loin. Though the same muscle, once it is atop the long ribs it is classified as a rib cut (wholesale beef cuts). The tenderloin is inside the body cavity directly below the loin. To me the backstrap is the entire muscle from the hips to the shoulders that lies along the outside of the spine.
