I'm wanting to cook out Thanksgiving turkey on my pellet smaker/grill. I've had good luck with pork roasts and venison steaks on it and wonder if there is a proven process I should follow. Will be cooking a ham at the same time.

I've not heard of that method.
Last year my son deep fried a turkey in peanut oil...it was amazing!
Frying is good if you have the equipment and the experience but then getting rid of the oil,bthe clean up . . . Nah. Been there and swore never to again.

I haven't done a turkey, but am planning to do one in the near future I was looking at utube videos online about smoking turkeys on the pellet grill, quite a few there. I'll probably brine it first put some rub on it and put it on the grill

The only way that I will eat turkey is deep fried. I am not a fan of the bird any other way. I brine it for 2 days, then put into the oil. Perfect every time, juicy and flavorful meat, and all skin a super crispy. Also, the bird is done really fast, 2.5 minutes per pound, and not taking up any oven space. As far as clean up, I filter the oil, and use it throughout the year, so it does not go to waste.
