Well I got to go "deer" hunting this week. The deer did not cooperate but I did manage to knock over a nice bearded hen turkey and a cool looking dalmation boar!

And here is how the turkey evolved for me! Took one side of the breast, stuffed it with boudin and cream cheese, wrapped it in bacon, and put in the smoker for 5hrs this afternoon.

It was no butterball but the bacon keeps it from drying out! That being said, I think this is my new favorite wild turkey recipe. It was fantastic!
