Anybody interested in a chile recipe for their wild pork ??
Sure,What is it?
It's a beanless pork chili here's what you need 2 pounds of boneless pork cut into 1/2 inch cubes 6 anehiem chilies diced you can remove the seeds and pith if you want it milder and you can roast them whole on a bbq before dicing for a smokey flavor, 1 large sweet onion med dice, 2 cans whole green chilies diced, 1 large 24 oz can diced tomatoes, 1 6 oz tomato paste, 1 1/2 tsp cumin more less for taste, 2 tbs chili powder 1 tsp coriander again to taste, salt and fresh ground pepper to taste brown off the pork in a little canola oil don't cook it through just brown it we are going for fall apart tender add a little water just enough to cover and simmer under a boil until tender add the rest of the ingredients and continue simmering until you get the consistancy you like serve with honey glazed jalepeno corn bread and spicy tortilla chips and salsa this recipe can be mild or warm depending on how you treat the chilies in the beginning give it a try, adjust it to your liking and enjoy
Thanks Mike, That sounds good..
Sounds yummy........thanks!
Thanks, but, well, you left out the most important part- the recipe for the honey glazed cornbread, crimson!!!!!!
I want to try that!! Can you pass yours along?
I'm sorry Ray where's my brain LOL ok follow the recipe on the Albers corn meal box it's one the best I've tested to that add a couple of diced jalepenos seeds and pith in for hot or removed for a mild heat and more or less to taste in otherwords if you like it hot add more jalepenos the glaze, one stick of butter that was allowed to reach room temp as cold butter looses up to 90% of it's flavor if it's added cold to a hot dish 1/4 to 1/3 cup of honey not the blended stuff combine and microwave just until liquid and brush on the bread just as it starts to turn brown also reduce the temp a little so that the honey has enough time to caramelize before it burns the butter will soak in leaving the honey to form a light brown crust my family love it the only trick is you have to watch it so it does'nt burn also try a couple of sprinkles of the chipotle shake I posted earlier on it that's good eats
now that sounds like good cornbread! Thanks!
