Just thought I,d share a recipe I just tried out that turned out very well.I got double the recipe from 1 front shoulder of a whitetail carefully cleaned of the silver skin/tendon stuff LOL
Pennsylvania Dutch Christmas Venison Sausage
3.5 lb,s venison ground 2tsp black pepper
1.5 lb,s smoked bacon ground .25 tsp ground allspice
.5 cup brown sugar .25 tsp ground cinnamon
2 tsp salt .25 tsp ground savory(I didn,t have this one)
1 tsp garlic powder .25 tsp ground cumin
1 tsp onion powder
.5 tsp ground coriander
Mix venison and bacon grind with coarse disk.Mix spices,shape into patties and fry.I put mine in quart sized freezer bags and made them thin about 1/2" or less so I can cut thru them frozen.It basically makes a big square patty.Hope you enjoy it as much as the guys here at work did.
The 2 rows of ingredents came together but I,m sure you guys can figure it out.

Wait till ya try this yrs Italian I got oops my wife picked up the spice,s from Gander Mnt for wild game and I mixxed 27#s of venision with 25#s of pork butt and I,ll bet it would go over well with the most picky ven. eater.There's absolutely no hint of game taste which yea I know some of us like that but often other's like my wife and daughters prefer it this way.Besides I save the choice cuts for myself.
