Dijon Fried Rabbit
1 - 2 rabbits (about 3 lbs)
1 cup Dijon mustard
2 cup breadcrumbs
1/2 cup olive oil
Cut the rabbit into serving pieces. Season the rabbit with salt and pepper; then using a pastry brush, coat each piece with mustard. Roll the rabbit in the crumbs to coat well. Heat olive oil in pan on medium heat. Fry rabbit till golden brown (10 min) per side. Drain on paper towels and serve.
Quick and easy to prepare and cook. It seems the rabbit is more tender when it is fried versus boiled.
Sounds like one snowshoe or two cottintails.
